Hummus

1 ½ cups cooked chickpeas or 1 can
1-3 cloves garlic
3 tablespoons tahini (ground sesame seeds)
1/2 teaspoon sea salt
2 tablespoons olive oil
2 tablespoons lemon juice
1/2 cup or more spring water, use chickpea water
1. Place all ingredients in a blender or food mill and purée until creamy. Taste and adjust flavors to your liking. Try different flavors by adding kalamata olives, or roasted red peppers, or sun-dried tomatoes, or even just red pepper flakes. Be creative!
2. Serve with your favorite vegetables.
